Basbousa Cake

Ingredients

Semolina - 1 cup
Sugar - 1 cup
Baking powder - 1 tsp
Whisked curd - 1 cup
Milk - 1/2 cup
Melted butter - 1/2 cup
Vanilla essence - 1/2 tsp
Butter
All-purpose flour
Almonds
Coconut pieces

For Sugar Syrup:
Water - 1 cup
Sugar - 3/4 cup
Cinnamon - 1 no
Rose Essence 
Method:
1. Take a glass jar, add 1 cup (250 ml) of Semolina (fine rava), 1 cup of Sugar, 1 tsp of Baking powder and give it a quick mix.
2. Add 1 cup of whisked Curd, 1/2 cup of milk and mix dry and wet ingredients together with 1/2 cup of melted butter.
3. Now, add 1/2 tsp of Vanilla essence and mix it well. Let it sit for 5 minutes.
4. Take a cake tin. Grease it with little butter and dust with little all-purpose flour and coat the tin with the flour.
5. Pour the mixed batter into the cake tin.
6. Preheat the oven for 15 minutes at 180 degrees. Bake for 45 minutes to 1 hour at 180 degrees.
7. For Sugar syrup. Boil 1 cup of water in a pot, add 3/4 cup of Sugar, 1 pc of Cinnamon and boil for 5 minutes on medium flame. 
8. Turn off the stove now and add few drops of rose essence. 
9. Bring to room temperature and strain the sugar syrup into a bowl.
10. Pour the sugar syrup over the cake and let it sit for 1 hour.
11. Garnish with little-toasted almond slices and coconut pieces.
Basbousa Cake is ready to serve.

Onion finely chopped
Tomato deseeded & finely chopped
Cucumber deseeded & finely chopped

Chaat masala powder - 1 Tsp
Tamarind & date chutney 
Garnish it with Sev & coriander leaves 
Salt to taste
Water

To make Mint & Coriander Chutney
Green Chilli - 2 Nos
Small piece of Ginger
Coriander & Mint Leaves - 1 Cup 
Juice of 1 Lemon
Salt to taste
Water - 1 TBSP

Method
1. Soak 1 cup chickpeas overnight.
2. Pressure-cook the soaked chickpeas with enough water & required salt for about 3 to 4 whistles.
3. For mint chutney – Grind 2 green chili, A small piece of ginger, mix of some coriander & mint leaves, extract juice of 1 lemon and finally add some salt to taste. (add water as required)
4. For the final mix add the soaked chickpeas, some finely chopped onions, tomatoes, cucumber and some grated carrot. (add ingredient as per taste)
5. For seasoning the chat add 1/2 Tsp of kala namak, 1.2 Tsp of red chilli powder and 1 Tsp of chaat masala powder. (add ingredient as per taste)
6. Add some freshly prepared mint coriander chutney and 1 Tsp of tamarind date chutney. (add ingredient as per taste)
7. Mix everything together and garnish it with some sev and freshly Chopped Coriander leaves.

Method
1. Start off with pounding few spices in to coarse powder which gives flavour for the dish like, 1 1/2 Tbsp of coriander seeds and 1 Tbsp cumin seeds.
2. For the patty add & mix – 1/2 kg of mince meat, 1 Tsp of salt, 1 Tsp of chilli powder, 1 Tsp of freshly pound coriander powder, 1 Tsp of freshly pound cumin powder, 1 Tsp of red chilli flakes and juice of one lemon.
3. To the mix add finely chopped – 2 Nos. of green chillies, 1 Tsp of finely chopped  ginger, 1 Tsp of finely chopped garlic, 1 No. of finely chopped onion and 1 No. deseeded tomato.
4. For flavour add some chopped coriander leaves.
5. Now add 1 no. egg, 1 Tsp of corn flour, and 1 Tsp of garam masala
6. Mix the whole ingredients together and make patties out of it.
7. Heat  the pan and add oil to fry the patties as required.
8. Wait until the oil heathens up.
9. Gently drop the patties one after the other and fry it in low flame for about 5 minutes on each side. 
10. Finally, for garnish add some coriander and lemon juice.
11. You can now serve the delicious kebab with your choice of salad or yogurt. HAPPY FOODING!!!!

Method 
1. In a large bowl take the maida, add baking powder, powdered sugar, butter and salt to it
2. Mix everything together 
3. Add fresh coconut milk gradually and knead the dough 
4. The dough should be a bit dense 
5. Take a small quantity of the dough and roll it out on a gnocchi roller 
6. Spread it thinly and roll it out as shown in the video 
7. Make similar shaped rolls with all the dough 
8. You can also use a fork instead of a gnocchi roller and follow the same steps 
9. Heat some oil for deep frying 
10. Deep fry all the rolled out dough 
11. Fry them on a low flame for about 10-15 minutes till they turn golden brown in color 
12. The Kul Kuls are ready. You can store these in an airtight container for about 2 -3 days.

Khasta Kachori 
Ingredients

To make dough 
Maida - 2 cups
Salt - 1/2 Tsp 
Ghee - 2 Tbsp
Oil - 1 Tbsp
Water 
To make filling 
Moong Dal - 1/2 cup 
Water
Ghee - 1 Tsp
Salt to taste
Chili powder - 2 Tsp 
Amchur powder - 1 Tsp
Chaat masala - 1 Tsp
Coriander powder - 1 Tsp
Kala Namak - 1 Tsp

Oil for deep frying 
Method 
1.  For the dough, take maida in a large bowl,  add salt, ghee, oil and mix them together 
2. Gradually add water and mix it together to form a dough 
3. Knead the dough for 10 minutes minimum and keep it aside for 30 minutes
4. For the filling, soak the moong dal for 2 hours minimum 
5. Strain it and grind it coarsely 
6. Heat a pan and add some ghee 
7. Once the ghee is hot add the coarsely ground moong dal to the pan 
8. Add salt, chili powder, amchur powder, chaat masala, coriander powder and kala namak 
9. Saute the moong dal mixture till it is cooked and becomes dry, and let it cool down 
10. Take a small amount of the dough and roll it out thinly 
11. Place the filling in the middle and seal the dough, pinch off the excess dough and flatten it slightly 
12. Meanwhile, heat a kadai with some oil for deep frying
13. Once the oil is hot, slowly add the kachoris into the hot oil and slow cook them till they turn golden brown in color
14. Once the kachori turns golden brown in color, take them out and serve them with some mint chutney

Method:
1. Slice an egg and keep it aside 
2. Chop an egg and keep it aside 
3. Crack open an egg in a bowl
4. Add salt, red chili powder, crushed pepper . Whisk the egg well.
5. Heat a tawa with some oil.  Add the whisked egg onto the tawa
6. After a minute, add the sliced egg onto the omelette 
7. Flip it and cook the omelette on both sides 
8. Once done, take it in a plate and keep it aside 
9. In the same tawa, add some butter 
10. Add some onions, green chilies and saute them 
11. Add ginger garlic paste and saute 
12. Add chopped tomatoes and cook them well 
13. Add all the spice powders and mix well 
14. Add some water and mash the masala 
15. Add some more water after mashing the masala 
16. Once the masala is cooked well, take it and keep it aside 
17. In the same tawa add some butter
18. Add the chopped egg pieces, green chilies 
19. Fry the egg pieces in butter and keep it aside 
20. To assemble the Butter Egg Mughlai, pour the masala onto the omelette, add the fried egg pieces on top of it 
21. Garnish it with some coriander leaves and serve it hot.

Corn Flakes Chivda
Ingredients

Ghee 
Roasted Chana Dal - 1/4 cup
Cashew nuts - 1/4 cup
Peanuts - 1/4 cup
Raisins - 1/4 cup
Few Curry leaves
Corn Flakes - 2 cups
Turmeric powder - 1/4 Tsp
Chili powder - 3/4 Tsp
Salt to taste
Hing/Asafoetida powder - 1/4 Tsp
Powdered Sugar - 1 Tsp

Method
1. Heat a pan and add some ghee to it
2. Now add the roasted chana dal
3. Remove it from the pan after it turns golden in color
4. Now add in the cashew nuts and roast it
5. Now remove it and roast the peanuts
6. After you roast the peanuts, roast the raisins in ghee
7. After the raisins puff up remove it from the heat
8. Now dry roast a few curry leaves and keep it aside
9. After you have roasted all the ingredients individually, add in the cornflakes
10. Roast it till it becomes golden brown in color, it is important to use unsweetened cornflakes
11. Now add in the roasted chana dal, cashew nuts, peanuts, and raisins and give it a toss
12. Now to season the chivda, add turmeric, salt, asafoetida, chilli powder and powdered sugar
13. Toss it nicely and add some ghee
14. Mix it evenly and remove it from the heat
15. You can store this in an air tight container.

Water

Method:
1. To a bowl, add onions, paneer, carrot, boiled potatoes, green chilies, coriander leaves, red chili powder, pepper, salt  and bread crumbs
Mix everything well and make small balls out of it 
2. Now, take a popsicle stick and shape the ball on it in the shape of a lollipop
3. Make all the lollipops in a similar way 
4. To make the batter, mix maida, cornflour, salt, pepper and water 
5. Make a smooth batter out of it 
6. Dip the lollipop in the batter and dip them in bread crumbs 
7. Heat some oil for deep frying and deep fry the lollipops till they turn golden brown in color 
8. Once they turn golden brown in color, take them out of the oil and keep the lollipops aside
9. To make the sauce for the lollipops, heat some oil in a kadai, add chopped ginger and garlic and saute 
10. Add onions, capsicums saute 
11. Add the sauces and mix well
12. Add some water and cornflour slurry and bring it to a boil 
13. Add some pepper mix well 
14. Serve the fried lollipops hot with the sauce 
15. Add some spring onion greens for garnish.
